Abstract
Skipjack (Katsuwonus pelamis L) is one of the important fish species relatively abundant and frequently caught by fishermen from the sea waters of North Sulawesi province. The fish having an important economic value is frequently consumed by the North Sulawesi people and exported. Fishes are high perishable commodities starting when they were caught or landed on fishing boat and died (rigor mortis). The research was aimed at studying the quality of skipjacks since landed to be sold, using laboratorial treatment analysis (Total Volatile Base Nitrogen, TVB-N, and total plate count, TPC) and organoleptic analysis (smelt, eyes, gills and texture) on skipjack samples. The results showed that TVB-N of the fish was still eatable to consume, white TPC was increased following the time and the value of TPC was still below SNI standard, and orgnoleptic test showed that the fish was still good to consume. The fish quality tended to diminish following the time rising.
