Abstract
Lipid oxidation can decrease food quality. Okxidation lipid can inhibit using. As antioxidant, betel leaf (Peper bette) is a natural product containing of phenol that inhibit lipid oxidation. This research was aimed at observing the influence of betel leaves in prolong storage time of smoked little tuna (Auxis thazard). The treatment, time of storage and concentration of betel leaf extract, were applied in the research. Data was analyzed using a completely randomized design with two replications. The research showed that extract of betel leaves can inhibit lipid oxidation and the smoked little tuna can still good to consume. The peroxide and TBA value are less than safety limid by SNI for food product.
