Abstract

Cathepsins are the enzime that plays very important role in various physiologic pattern in fish. This is crucial to be observed, thus, we could produce the fish product in high quality. There are many kinds of cathepsins, however in this paper we will discuss the cathepsin B, D, H, L and S that belong to the cysteine protease and aspartate protease.
